To switch stocks on a typical M4, you don't need to take much apart at all.

To take a full stock off:
1. At the rear of the full stock, take the butt cap off (it may be rubber or plastic). Most are held on by 2 screws. It might just come straight off or you may need to push it down and then off (like removing the battery cover on a cell phone or remote control).
2. On some full stocks, the top screw of the butt plate is actually a really long screw and holds the stock on to the receiver. On others, there's another screw deeper in the stock. Look down into the stock, you should see a screw head. This screw holds the stock and presses it against the rear of the body. Remove this screw.
3. If your rifle is rear wired, make sure that the wiring is pulled out straight as possible. If it's all jammed up, you could damage the wiring when you get to the next step.
4. With the screw from step 2 removed, you should be able to pull the full stock straight back and off of the lower receiver stock tube stub. Make note of the round "washer" that fills the gap between the stock and the receiver. Take that off and keep it with the full stock.

Now you should have your 90% assembled rifle with nothing but the receiver stock tube stub sticking out the back.

To install a collapsible stock:
1. Place a rear receiver cover (it looks like the "washer" from step 4 above, but is bigger to cover more of the receiver), over the stock tube and slide it down flush to the body. If the fit is tight, you may need to do some filing or sanding. NOTE: There's usually a raised bump in the lower half of the spacer, the bump goes into the receiver, it doesn't stick out.
2. If it is in place, take the collapsible stock off of the stock tube. To do this on some you can just squeeze the release and it will slide right off. On others you need to pull the release the other way and it will cam the retaining pin further and then you can slide the stock off the tube.
3. Take the stock tube and place it over the receiver stub. It should slide on easily, if not you may need to do some sanding/filing.
4. You stock tube should have come with a washer and a screw. Insert the washer down the stock tube and screw the screw in. It actually goes through the pipe and screws into the nut in the back of your spring guide. You do not need to crank down really hard on this screw. Just nicely tight is good enough. If it is a plastic body, tightening too much can crack the receiver.
5. Almost done. With the stock pipe tightened on, put you stock back on the pipe.

Note: If your rifle was front wired, you're done...and go have fun. If your rifle was rear wired, you've got to sort out how you're going to run your wires and battery from your collapsible stock (i.e. a battery bag, a MOD stock or a Crane stock)...but that's another story.
