I would use small replica SAPI plates, if I could find them! For now, I have cardboard inserts that I've cut into shape and taped together for my Eagle Plate Carrier.

I got them instore. Not sure if I'm going there again though. Cuddlefish/Viperfish knew the most about airsoft there and he quit. So I'll probably buy my gear somewhere and seeing that Cuddlefish is a BB bastard and he doesn't work there I presume I gotta get my bastards somewhere else.

Yeah I saw them on their website but a buddy of mine told me they were asking 99$ a piece at the store...
And considering the last time I ordered from their website it took almost a month for me to get what I ordered I didn't want to do it online... But I also didn't want to pay 200$ + tax for the plates...

Also what sizes do they have? Do they only have one size or do they have Med, Large, Etc.?

They are size Large and roughly 33.5cm in height, 26cm in width and 2cm thick. there is a curve to them so these measurements might not be perfect.
